Jodhpur Royal Dining's Ramadan Menu

​We were ecstatic to be invited for a sneak-peak of the Ramadan menu at Jodhpur Royal Dining! For those who are a little unaware about newer places, make this your priority because dining here is an experience! There are quite a few existing molecular gastronomy F+B joints in Dubai, but Chef Pradeep Khullar will enlighten and broaden your perception as to what it actually means and how its not about just the dry-ice sublimity!


Chef Pradeep Khullar explained to us that the food at Jodhpur Royal Dining is essentially a "modern-take on traditional dishes” which we think is necessary to keep the cuisine or that kind of food viable in today's time! It basically is an update, one will appreciate because he is stern on the core taste or the essence of food not being lost in translation. Having himself accepted that he does not shy away from swapping ingredients to something better- like for example, in one of his dishes he swapped hung curd with non-traditional Philadelphia cheese, just because the cheese enhanced the dish a bit more! Now, this kind of an update is always welcome and it felt like an honor to be invited to a place where the chef has such a thirst for innovation and client satisfaction, we knew we were in good hands! 

So after like brief introduction, we were ready to get some food down our systems! And since its a Ramadan special menu we kind of anticipated some milk and dates for sure.

The Food


Kataifl Dates:
Umm, okay so these were not JUST dates, these were dates stuffed with nuts that were bound by caramel ON crispy kataifl pastry, the presentation of which resembled a birds nest and the dates like the eggs. My wife and I were just talking amongst us how this is almost symbolic as the beginning of a journey and in our case our food journey! 
​Jeera Khaari with Herb Yogurt:
I know this is not even like one of the appetisers but it was definitely my absolute favourite! Just because, it immersed us in some serious nostalgia and then this never tried version tasted SO good! A khari is basically flaky puff pastry that everyone in an indian household must have dipped in tea and eaten, but the Jodhpur version served us a khari flavoured with caraway seeds with a herb flavoured yogurt! And as skeptical we were, it was definitely a winner. The garlic yogurt with the pastry just clicked, and we found ourselves almost licking the bowl clean with the herbed yogurt dip! #priceless
​Amuse Bouche:
Fancy was the course and fancier was what was being served! Macaroon Chaat! Its literally the USP of Jodhpur the restaurant and is something they haven’t put a price on! You just get it by default. A macaroon has seldom been done in a savoury manner but this one tried and won! Sweet and chewy macaroon shells covered a filling that was tangy, sweet and sour at the same time! 

Chicken and Chestnut Kulcha:
Bite sized kulchas stuffed with a generous portion of chicken indian style (caramelised onions, coriander, chillies etc.) and some water chestnuts that added to the crunch. It was served with labneh topped with some peppery spices that balanced the spicy flavour from the kulcha and made the appetiser a complete dish!
​Laban and Ricotta Kebab:
This was definitely something unheard of but it tasted really good! A mixture of laban and ricotta made for the core which was batter fried with a tempura sort of coating and covered with roasted rose petals! The amazing thing was it was fried but at a temperature that didn’t allow the cheeses to kind of melt or overheat maintain the dignity and the rose petals just added some extravagance to the whole experience.
​Beef Short Ribs:
YUM. My wife and I devoured this perfectly trenched chunk of meat and couldn’t stop raving about it! Slow cooked beef (8 hours almost, the chef tells us!), covered in a tangy and sweet tamarind  glaze had us licking our fingers! The meat was cooked to perfection. Come to think of it, This combination of flavours was a no brainer. Having said that, everybody is a genius in retrospect. So full marks to the Chef and his team. #favoriteagain 
​Palate Cleanser:
Mango, cranberry and kaffir lime sorbet: 100 points for the presentation! I mean how cute are these little pressure cookers? Genius! The cleanser served its purpose and did give us the necessary alignment needed after those heavenly short ribs, to be ready for the highlight of the night: The Main Course! 
​Main Course:

Lamb Nihaari:
This dish is an all time favourite in our community and we were literally excited to see Chef’s touch to it. So the lamb shank as told to us was cooked for almost 24 hours in a pressure sealed vessel so that the steam cannot escape. This is necessary to maintain even cooking temperature in the vessel and also to make sure the meat doesn’t go dry! To our surprise, instead of the conventional roti and naan we were served the nihari with a "sesame bakharkhani" which is basically a crusty/ flaky/ buttery and uber yummy bread that amplified the good old Lamb Nihari experience. Gorgeous.
Choor Choor Naan:
​Choor Choor Naan is pretty self explanatory, it went well not only with the lamb nihaari but with the accompanying raita as well.
​Miniature Pav Bhaaji:
A clear presentation winner! It was so cute with the way it looked. A platter with a sunken bowl carried the lip-smacking Delhi style masala-ed bhaji, while being served with mini bite sized pav's buttered, skewered and placed on top of the bhaaji. Also having a lovely garnish of some dehydrated vegetables that not only looked good but were crunchy and added to the texture of the experience! 
​Chicken Tikka Biryani:
My wife’s ultimate favourite! She’s been eating tikka biryani in Bombay since forever and when she realised it was being served, I think she almost didn’t want to share it even! Luckily our server portioned and served us and I tried the dish that even though being so traditional had a twist of the flavours from the chicken tikka that went well with the Buttery rice it was with! Well thought of.

Milfoam Rabdi ~ Rasmalai:
But not just any Rasmalai of course, Chef’s take was one served with saffron milk, topped with milk foam and nuts and topped again with the gorgeous katafi pastry we tasted earlier with the dates! We were specifically asked to get a spoonful of each of the elements to feel the magic and rightly so, there was something so surreal about the experience of sweet, crunchy and nutty at the same time! The dish itself was balanced and not overtly sweet as is a major worry with most of the foodie joints here! Kudos on this one!
​Kesar Malai Kulfi:
Traditional? Yes! Innovative? Yes! So, we all love our kulfi and don’t want a mess of flavours with it, but this one was simple yet impactful! A) It arrived with all its theatrics of dry ice in a customised wooded JODHPUR imprinted box, and B) It was surrounded by little freeze dried raspberries that when eaten with the kulfi cuts and balances the richness and sweetness of it! It was nice without being overpowering which is a really good effort! 
​*SPECIAL MENTION* Peanut Butter Creme Brûlée:
Okay, so this isn’t a part of any menu of any kind but the Chef had done some research of his own and read on my website that I love peanut butter, hence as a surprise custom made a PB creme brûlée for me. It was an insanely special gesture and I cannot thank the Chef enough for the experience! Oh, and the brûlée was award-winning!
