Waffle Factory, Bur Juman

Waffle Factory was established at the end of the 1990s. At that time Belgaufre mainly manufactured frozen dough for Liège waffles.   

On the initiative of Stéphane Desobry, who had been aware for some time of the limitations and costs of the frozen product, he and his father embarked on a lengthy exercise to develop a dry dough mix for Liège waffles. The result of 2 years’ work is a lower fat product (barely 12% fat content) to be produced fresh and tasting absolutely delicious.       
Small sales outlets (originally 6m²) will now have a craftsman working in their unit each morning to produce fresh dough, which will then be cooked to order for the customer.  

Waffle Factory began essentially with Liège waffles, but a few years later other dough recipes were created for both savoury waffles for main meals and sweet ones for increasingly tasty desserts.  

The LunchWAF, a true lunchtime or evening meal, quite unique in its preparation, will become a favourite with customers who, tired of endless sandwiches or pizzas, will enjoy this "waffle like no other waffle".   

Filled Waffines and other Wapitis will make up the now extensive Waffle Factory product range.


We were THRILLED to be invited to this this new buzzing place in town, which also a part of the new F+B outlets opened in Burjuman lately! Luckily we were in the vicinity and the French Co-owner who happened to be there, very politely welcomed us and walked us through the whole history of Waffles, Belgium and Waffle Factory! It was an intimate tasting session and we were so happy with the food that was served to us and company we received. Read along our journey with the Waffle Factory!



Now, if someone does serve coffee, my wife would never give up a chance to have it! She said this one was just what she desired for- a no fuss straight up cappuccino.
Karak Chai

Karak chai translates into strong tea in English, and that it was. One of the really good ones in Dubai. 


The food at the waffle factory was divided into savoury as well as sweet waffs. So obviously we started with the savoury waffles. We were taken through how these waffles are made creating a fermented and rested savoury dough- pretty much like a pizza dough. The basically flatten out a piece of dough., add the filling in the centre and fold the sides into the centre to create a "closed pizza" almost. This preparation is then cooked on the waffle iron and hence it takes up the shape of a waffle and is also evenly cooked. 


Chicken Tikka Waff

Absolute favourite. The filling was lightly spicy but it complemented with the waffle dough and became like this amazing sandwich. It was just the novelty of having a savoury waffle that got us so excited! 
Chicken With Emmental

We were so pleased when we heard that we would get emmental in our waff, because not a lot of outlets do this cheese for whatever reasons. It paired well with the chicken filling and some ketchup on the side we had ourselves a full meal.
Pesto Chicken Waff

On the recommendation of the very French but very friendly co-owner we decided to try the pesto make from their kitchen and boy was it good! Pesto is a well rounded sauce and we both love the strong whiff of basil and if the sauce is left a bit nutty it instantly wins our hearts. Chicken and pesto are almost like classics and that wrapped in a freshly made waffle dough is bomb!


Confession. We were literally full to the brim with our savoury waffs that we almost did not want to push it, but when were being explained about the different varieties of waffle doughs and how each dough has a different texture once cooked, we though a few more bites would not hurt. So the different varieties were the 
  • Brussles Waffles
  • Liege Waffles
  • Waffine Waffles 
Liegh Waffle: Nutella, Date Syrup

This ​is a richer, denser, sweeter, and chewier waffle, and is apparently the most common waffle available throughout Belgium. We got ours topped with Nutella which was extraordinary and with Date Syrup (picture below)
The good thing about the syrup on this type of waffle was that it completely soaked the syrup and became this syruppy cake! We loved it!

Waffine: Lotus Spread 

​The Waffine is more like a thin brioche dough, and we got ours filled with Lotus Spread. The texture was literally like a soft flattened out cake and it was one of my favourites from the waffle lot!
Brussels Waffles: Peanut Butter, Belgian Dark Chocolate

​Brussels waffles are prepared with an egg-white-leavened or yeast-leavened batter, traditionally an ale yeast occasionally both types of leavening are used together. They are lighter, crisper and have larger pockets compared to other European waffle varieties, and are easy to differentiate from Liège Waffles by their rectangular sides.
We got ours topped with Peanut Butter: Fantastic. It was like biting into a sugar cookie. Extremely light and there are so many toppings you can play around with. 
Brussels Waffle with Dark Belgian Chocolate

We preferred this over the PB any day because the quality of chocolate was finger lickingly superb!

Though we could not possibly have had a morsel more of any kind of food, we did not try the ice cream shakes or the ice cream itself. Maybe next time...

It is a genuinely interesting concept and it will definitely blow your mind just to learn about different kinds of waffles as opposed to just assuming every waffle tastes like the American waffle. The Savoury ones were the show stealer for us obviously because it is a very new concept and we loved the combination! They are coming up with new interesting food combinations so keep an eye out for them, and in the meanwhile definitely go treat yourselves to one of these, and thank us later!
